This is a super-affordable and very satisfying dish that my friend Trish made for lunch today. She is instructing my girls about knitting while I am catching up on some work – a little blogging. Knitting would have been fun, but maybe next time…
Sauté 2 large, sliced onions till very soft and yum. Add a teaspoon of cumin and stir in a can of chopped tomatoes. Simmer this for 10 minutes or so. Then add a can of cannellini beans – and when heated through, tip into a casserole dish and top with grated cheese. Bake till bubbly, at about 160°C (325°F).
We ate this with bread and a salad of leafy greens and feta.

Oniony goodness!
It would be possible to substitute the beans for pasta, or cooked or cubed potatoes. Or you could spoon this beany dish over a baked potato, and that would leave everyone full and contented.
