Garlic, chopped tomatoes, cream, bacon, pasta.
This is really delicious. Put four big cloves of crushed garlic in a pan with two cans of chopped tomatoes and a big splash of oil. Allow it to simmer away while you chop up a handful of bacon, then sauté that in a pan with another splash of oil until it’s golden. Boil a packet of pasta in lots of salted water. Stir ½ cup cream into the tomato, then add the bacon (and the oily part – it’ll keep you warm in the winter).

Drain the pasta, add salt and pepper, then stir through a splash of oil. Tip into a big heated bowl – or straight onto individual plates – and spoon the sauce on top. You may serve cheese, but I didn’t use it and it was just perfect anyway. The garlic flavour captures and holds your attention, the cream rounds everything out – and combined with the undeniable joys of bacon, nothing more is needed.
