Go Fish
I have found that fish incites strong emotions in people; they seem to either love it or hate it. If you’re a fan, give this wee recipe a whirl. If not, you could try subbing the fish for shredded cooked chicken, the capers for a handful of pan-fried mushrooms and leaving out the lemon.
What you need…
1 potato
1 golden kumara
30g butter
½ onion, finely chopped
2 stalks celery, finely chopped
Pinch of cayenne pepper
2 tbsp. flour
1 c milk (blue)
500g smoked fish of your choice, fresh or canned, flaked
1 tbsp. capers
Zest of one lemon
Salt and pepper to taste
How to make…
Peel and chop potato and kumara and cover with cold water in a pot, boil until soft. Drain; add a splash of milk and mash.
Heat butter in pan, add onion and celery and cook until soft. Add cayenne pepper and flour to pan and cook for a further minute.
Begin to add milk, slowly at first so lumps disappear then add the remainder. Bring to simmer and continue until it reaches a sauce consistency.
Remove from heat and add fish, capers, lemon zest, salt and pepper. Transfer to oven dish and top with the mashed kumara and potato (add cheese and bread crumbs optional).
Bake for 30 minutes at 200 degrees Celsius.
