Here’s something Brit-inspired for you all to nibble away on while enjoying the Olympic Games. I would recommend making this with good quality marmalade for optimum yum factor (I was lucky enough to have a jar of the most recent batch my Grandma was slinging). Now this one is heavy on the fruit, so if you or your flatmates are not sultana fans this won’t go down so well.
 
What you need…

220g sultanas
120g marmalade (I used homemade orange marmalade)
50g brown sugar
1 cup of hot brewed earl grey tea
1 egg
2 tsp. baking powder
240g flour

How to make…
Preheat oven to 170 degrees Celsius. Put the sultanas, marmalade and sugar into a microwave safe bowl and pour the hot tea over the top. Stir to dissolve the marmalade and sugar and then blast it for 1 minute in the microwave. Remove and let it cool so it is just warm to the touch. Mix the egg into the tea mixture and then sift in flour and baking powder into the bowl, stir to combine and no more. Pour into a greased loaf tin and bake for 50 minutes or until golden on top and a knife when inserted in the centre comes out clean. If it browns too quickly, cover with tin foil and continue baking.
